Using dry egg powder really speeds things along. It can make pancake mix, muffin mix, or use it in a pinch regular eggs aren’t around.  The dry egg works well in baking. Scrambled eggs work best with the regular eggs but even though people say that you can! Also, if you don’t have access to egg powder, you can swap to the regular ones when you mix up the muffins.
